This group includes vitreousness (wheat, rice), naturalness (wheat, rye, barley, oats), falling number (wheat, rye), the quality of raw wheat gluten. Also, often in wheat, the number of small, frosty grains and grains that have been damaged by a turtle bug is determined.

Vitreousness: from the consistency of the grain, it can have a different shape, namely: vitreous, semi-vitreous, and mealy. It is believed that the denser the consistency in the cross section, the higher the vitreousness indicator. If there are microscopic voids in the endosperm when examining it, then it usually looks mealy. Vitreous wheat requires more energy for grinding than mealy wheat, but nevertheless, at the output, it is much better than mealy wheat.
